Passionfruit & Apricot Slice

Documenting one of our family faves...

Passionfruit & Apricot Slice

100g Butter
100g or 1/2 C Brown Sugar
1/2 tin Condensed Milk
1 pkt Superwines (or other plain biscuit)
1 C Chopped Apricots
1 C Coconut

Melt butter and then stir in brown sugar and condensed milk.
Mix crushed biscuits, apricots and coconut in a separate bowl.
Put both mixtures together and mix until all is well and a bi sticky

Press into a tin (I use my small square or little rectangle)

Chill in the fridge and then cover with passionfruit icing (passionfruit pulp mixed with icing sugar and a little bit of water).

Christmas Season 2016

Our impromptu and super stressful dash into the big smoke to take new pics into the passport office. Lucky it turned out well and passports are done but it was a bit touch 'n go for a minute there. These girls were so excited to be by the Sky Tower....we NEVER go into the city


Lucky these girls got new hats for christmas cause they're obsessed with wearing these hats. Otherwise they'd be repping Summerland on the Goldie in a couple weeks

FYI ...It's really hard to find your car in the sky city carpark so take note of the carpark number if you ever park there....not sure I ever will again though cause it cost $15 for 1 hour!

Just gotta post this here so it never gets lost....I'm pretty good at it!

6 Egg whites
1 1/2 C Caster Sugar
1/2 C White Sugar
2 tsp Vinegar
2 tbsp Cornflour

Beat egg whites until soft peaks
Add caster sugar very slowly, beating well between each addition
(about 1/4 C at a time and beat for 2 minutes each time)
Add normal sugar and beat until firm peaks and glossy.
Add vinegar and cornflour and beat more

Conventional Oven
Bake 150 for 25 mins
Bake 100 for 1 hour 35 mins

Fan Bake Oven
140 for 25 mins
90 for 1 hour 35 mins

Joe had been asked to do a couple jobs at school for months and he finally got round to it in early december


I love reading the girls writing books...especially when they're year 1/2 cause they always just write about things they've done like birthdays, baptisms,  cuzzy sleepovers



A little pressie for Faith's teacher cause she left about 3 weeks before the end of term to have her first baby. This was the first time I've found it hard to buy a baby present cause we didn't know if she was having a boy or girl. Turns out she had a gorgeous little boy called Sebastian

??? Dall's afternoon nap. She still conks out at about 3pm each day she's at home. I think at kindy she gets put down for a sleep at midday. Not sure about her clothing this afternoon!
