Curried Chicken and Rice

One of our whole family's faves. Gotta document it just incase I ever lose my little cards with the recipe.


Here's the recipe as I always make it for my sqaure white dish 

2C Rice
60g Melted butter
1 Egg
2 large chicken breasts
90g butter
4 tbsp flour
2 tsp curry powder
3 C milk
1 C mayonnaise
2 Eggs
2 tsp lemon juice
4tbsp chopped parsley
grated cheese

Cook rice and mix in the 60g butter and 1egg when it's cooled a bit (so the egg doesn't scramble)
Press into cooking dish



Cut up 2 large chicken breasts into small pieces and cook in pan then put on top of the rice layer



Melt 90g butter in saucepan then add flour and mix together with whisk. Add curry powder.
Add milk gradually and keep stirring. Sauce will thicken over about 5-10 minutes. Add mayonnaise and then lemon juice and parsley. Remove from heat when thickened and cool. When cool, add 2 eggs and mix (cool enough so the eggs don't cook).
Pour over chicken and rice, then top with grated cheese and cook at 180C for about 45 mins











Definitely one of our family's all time faves.....every single person loves it, and that very rarely happens around here.
