Roast Vege Enchiladas/Tacos?

Kind of weird to have a question mark after the name of a recipe, but I'm not entirely sure what these are....except they're yum and we all ate them.

They were made with a soft taco kit, but rolled up like enchiladas....hence the confusion over the name.


Roast Vege Enchiladas/Tacos?

Everything is kind of rough measurements and could totally be altered to suit taste preferences

1.5 capsicums sliced into 2cm pieces
1 leek sliced into rounds
8 mushrooms sliced
4 kumara washed and sliced
1 eggplant cut into small pieces
1/3 pumpkin peeled and cut into 2cm-ish pieces

Spread out veges in oven tray and season with salt and pepper. Drizzle over some oil and cook until everything is soft.
In the soft taco kit there's a taco seasoning powder and pouch of salsa. Add both to the veges and mix through.
Spread about 1tbsp sour cream over each taco, put on about 2-3 tbsp of the veges and then roll it up. Place them in a small baking dish and then top with with some grated cheese.

Cook for about 15 minutes (the cheese will melt and they tacos will go a little crispy)

I did this the night before I actually wanted to make this dinner. Chopping up veges isn't so bad when the kids are in bed and you can stand at the table watching The Block at the same time



Spread sour cream on






Would be great served with any kind of salad

Note: Could add roasted carrots, normal onions, courgettes
